We have two boys:

[name_u]Rowan[/name_u] [name_m]Davis[/name_m]
Expecting baby #3 and the gender is a surprise. We didn’t find out with our second and our girl name then was [name_f]Evie[/name_f] [name_f]Mae[/name_f]. [name_f]Evie[/name_f] has become such a popular nickname I’m not sure we want to use it now, almost 3 years later. The other boy name we eliminated was [name_m]Boone[/name_m] because our last name is short and it was not enough syllables. (3 for first and last name).
I love E names and almost wish we would have used [name_u]Everett[/name_u] (family name) as a first name for a boy.
Also love double names (southern) for girls but uncommon ones.
Our last name ends with -er so that eliminates a lot of names we like because of the double -er sound (cooper, [name_m]Asher[/name_m],etc)
Need a boy and a girl name and we’re stuck! Any and all ideas are appreciated!
We have a little [name_u]Everly[/name_u] [name_f]Vivienne[/name_f]. [name_u]Everly[/name_u] might suit your criteria, starting with E and being more rare than [name_f]Evie[/name_f]. She goes by nicknames [name_f]Evie[/name_f] and [name_f]Eve[/name_f], with the option of the more formal/full name when she wants it.
I think you could still use [name_u]Everett[/name_u] for a boy! It’s definitely not too weird to have the first’s middle as the third’s first name. But if that’s not your style, what about [name_m]Everard[/name_m], [name_u]Emmett[/name_u], [name_m]Eames[/name_m], or [name_m]Eli[/name_m]?
Basically pair any of those with [name_f]Mae[/name_f], [name_f]Rose[/name_f], [name_f]Kate[/name_f], [name_u]Jean[/name_u], [name_f]Jane[/name_f], [name_u]June[/name_u], [name_u]Lou[/name_u], [name_f]Louise[/name_f], [name_f]Nell[/name_f], [name_f]Bea[/name_f]/[name_f]Bee[/name_f].
