The traditional spelling is [name]Elliot[/name]. I would stick with that spelling to avoid confusion and misspelling.

Yes, [name]Eliot[/name] (or [name]Elliot[/name], [name]Elliott[/name], [name]Eliott[/name], etc.) is very quickly becoming a unisex name rather than a strictly masculine name. For a boy, I like the spelling [name]Eliott[/name] or [name]Elliott[/name]. However, I prefer it as a girl’s name, spelled either [name]Eliot[/name] or Eliotte.
