I’m loving [name_m]Gervasi[/name_m] right now but could it survive in the modern age? Especially in the U.S.?
I’m not at all familiar with it and have no associations, modern or otherwise, so I can’t say that I think it has an especially old-timey image. I don’t see why it wouldn’t work in the modern age! But it’d probably be quite troublesome in the US regarding pronunciation.

I know of [name_m]Gervais[/name_m], although more like a brand or a last name, but never saw [name_m]Gervasi[/name_m] before

To me it sounds like a surname. I don’t see any reason why it would be unusable besides its unfamiliarity in the US, which may come with some spelling/pronunciation issues.

I can’t think of or see any specific reason it would be unusable, other than that I wouldn’t be 100% certain how to pronounce it.
