Our last name is [name]Nelson[/name]. With such a simple and boring last name should we stay away from simple names? Should we stick with something more complex?
I think [name]Jane[/name] is stunning but is it too plain with [name]Nelson[/name]?

I think [name]Jane[/name] [name]Nelson[/name] sounds fine, though I would add a more extravagant middle name to spice things up.
I think [name]Jane[/name] is stunning too and don’t think [name]Jane[/name] [name]Nelson[/name] is too plain - it is on the plain side, but not too much so. My one reservation is how there’s a lot of n, and it kind of flows together like [name]Jay[/name] [name]Nelson[/name] or [name]Jane[/name] [name]Elson[/name]. That said, it’s just a consideration, not enough to necessarily rule the name out.
I like all the other names you suggest quite a bit too! Perhaps [name]Alice[/name] and [name]Rose[/name] especially.
I agree with the PP (ETA: I agree with @pansy! @jesba posted while I was answering, I think… a lively MN spices [name]Jane[/name] up quite nicely! Although @jesba does make a good point about the [name]Jay[/name] [name]Nelson[/name] thing). I actually think [name]Jane[/name] is the most interesting choice with your LN from the names you’ve listed! I also love [name]Alice[/name] and [name]Anna[/name], for what it’s worth.
[name]Jane[/name] is not at all boring! It’s on my short list too. 
We actually have very similar styles in names. I also love [name]Rose[/name] with your last name.
If her nickname is [name]Janey[/name], then I don’t find [name]Jane[/name] boring in any way.
