DH and I seriously in love with [name_u]Joss[/name_u] if one of the babies is a boy. We like [name_m]Josiah[/name_m] for as a full name. Are there any other names that might work better, and that works with [name_f]Phoebe[/name_f] and [name_f]Caroline[/name_f]?

[name_u]Joss[/name_u] would be a great nickname for [name_m]Joseph[/name_m]. The writer [name_u]Joss[/name_u] Whedon was born [name_m]Joseph[/name_m].
[name_m]Joshua[/name_m] is where my mind goes first for [name_u]Joss[/name_u], but [name_m]Josiah[/name_m] is much more my taste. [name_m]Josquin[/name_m] is another option, but since it’s on the rare-and-invented side it might not go well with your girls.
