I prefer May to Mae in general, and much prefer May with the pretty, bucolic and British, Eliza. Looks more elegant and understated to me. 
You can use Emmy as a secondary nn too.
Btw, my close friend is Eliza and is one of the few friends who gets her full name, no nn. It’s a lovely, spirited name!
