I think [name]Birk[/name] puts a fresh spin on [name]Peter[/name]. [name]Peter[/name] [name]Birk[/name], intriguing.

My Grandpa was named [name]Edwin[/name], so that was one of the first names I considered… until my [name]German[/name] [name]MIL[/name] mentioned that his initials would be PES, or dog in Czech (and several other languages.) That kind of spoiled all “E” names… needless to say we aren’t considering “O” or “I” names either.
I chose [name]Peter[/name] [name]Frederick[/name], which is just perfect to me. I also like [name]Peter[/name] [name]Elliott[/name], [name]Peter[/name] [name]Edward[/name], and [name]Peter[/name] [name]Edwin[/name] (this one especially because of the family meaning for you). I know you said no to those because of the initials, but, in my opinion, the initial thing is overrated, unless it’s really really bad, which none of these are, [name]IMO[/name]. I would especially not worry about other languages. I’m sure you can find bad things in some language for most three letter combos with vowels.
I also love [name]Frederick[/name] as a first name. [name]Franklin[/name] not so much unless it has a family history. ([name]Just[/name] my opinion.)
[name]Love[/name] [name]Peter[/name]! It was my favorite boys’ name at one point. 
I really like [name]Peter[/name] [name]Conrad[/name] as a combo–I really like the suggestion of [name]Peter[/name] [name]Elliot[/name], as well!

I especially love: [name]Conrad[/name], [name]Gregory[/name], [name]Frederick[/name], [name]Vincent[/name]. I voted for [name]Frederick[/name], but I like the others equally well.
I think you would do better with something more than 1 syllable.
I voted for [name]Peter[/name] [name]Vincent[/name], but only because I loved [name]Roddy[/name] McDowall’s character in Fright [name]Night[/name] and couldn’t pass up the chance. Aside from that irresistible reference, I’d probably go with [name]Peter[/name] [name]Gregory[/name]. Nice flow.
