So, presuming I can get over the fact that [name]Persephone[/name] means “bringer of death”, while [name]Annie[/name] certainly isn’t an obvious nn for [name]Persephone[/name], when you say it outloud (per - sef - ah - nee) it could work. Thoughts?

Sef/Seph is my top nickname for [name]Persephone[/name], but [name]Annie[/name] has a lot more charm. It gives her something to fall back on incase [name]Persephone[/name] is a little, well, pretentious and frilly for her.
I prefer Persy or Seph as a nn, but [name]Annie[/name] works! If it works for you, I don’t think nicknames have to be too exact.
And about “bringer of death”…I’d encourage you to read the actual myth if you haven’t already to feel better about that particular meaning. It could just as easily mean “bringer of spring” which is worlds nicer.
