[name_f]Zoe[/name_f] and [name_m]Zo[/name_m]ë are fine, but I personally really dislike the [name_f]Zoey[/name_f] spelling. It just looks off to me.
I like [name_f]Zoe[/name_f] the best. [name_m]Zo[/name_m]ë is my 2nd choice, but I have to admit: I don’t even know how to make that accent above the letters when I type (I copied/pasted from your original post!), which makes me wonder if a child with that accent in their name would just end up dropping the accent and going by [name_f]Zoe[/name_f] in all typed communications anyway.
I agree with the previous poster that [name_f]Zoey[/name_f] is not my favorite. I think it feels a little more childish somehow…? It just seems like it wouldn’t age quite as well.
If you’re in the US, just do [name_f]Zoe[/name_f]. People know how to pronounce it but not how to type the umlaut, it just ends up seeming extraneous. [name_f]Zoey[/name_f] is ok but looks more like a nickname when it’s not - [name_f]Zoe[/name_f] by itself is great!
I much prefer [name_f]Zoey[/name_f]. [name_f]Zoe[/name_f] has always felt incomplete to me.

[name_f]Zoe[/name_f] then Zoë. Never [name_f]Zoie[/name_f], Zowie, [name_u]Zooey[/name_u] (looks like zoo-ee), etc.
I would use [name_f]Zoe[/name_f]. If you’re in the US, the accent mark will be omitted from official records anyway.
If you’re thinking of it as being a traditional name then [name_f]Zoe[/name_f] is best.
But if you think of it as more of a modern name, use [name_f]Zoey[/name_f].
[name_f]Zoey[/name_f] is more girly, while [name_f]Zoe[/name_f] is more grounded.
Alt key held; then 137 on numeric pad → ë - [name_m]Zo[/name_m]ë -if any one is using this system- its always googable as e-umlaut and as @southern maple says is not even credited in some countries whether it looks prettier or not!
So for me its [name_f]Zoe[/name_f] or [name_f]Zoe[/name_f] -I still use [name_m]Zo[/name_m]ë for my own benefit.
I don’t hate any but I like [name_f]Zoey[/name_f] the least, makes me think lf [name_u]Joey[/name_u] and it I think it makes it feel like a nn. [name_f]Zoe[/name_f] is most common and easiest through life typically, [name_m]Zo[/name_m]ë is good too though.
