[name_m]Isaac[/name_m] is my pick purely out of bias. 
It’s by far my favorite of your choices, and with [name_m]Matthew[/name_m] has a nice Biblical vibe. I also like [name_m]Oliver[/name_m] and think [name_m]Oliver[/name_m] [name_m]Matthew[/name_m] actually flows better, but I just prefer [name_m]Isaac[/name_m] [name_m]Matthew[/name_m]. I’m lukewarm about [name_u]Noah[/name_u] as a name. [name_u]Elliot[/name_u] [name_m]Matthew[/name_m] actually sounds nice too, but I’m not a fan of [name_u]Elliot[/name_u] and prefer the more cohesive classic overall feel with the other names.
I love [name_m]Oliver[/name_m] and [name_u]Elliott[/name_u]. They both go really well with [name_m]Matthew[/name_m] as a middle.
[name_u]Elliot[/name_u] is one if my favs!
[name_m]Isaac[/name_m] is my favorite on your list by far! My second choice is [name_m]Oliver[/name_m]. Thirdly, I would choose [name_u]Noah[/name_u].
I am not a big fan of [name_u]Elliott[/name_u]. I tend to evaluate and want to like each component/syllable of a name. This makes me aware that the first half of the name “[name_f]Ellie[/name_f]” sounds like a girl’s name and “…ott” makes me think of girl names like [name_f]Charlotte[/name_f] and [name_f]Harriet[/name_f].

P.S. For best flow with Matthew, I prefer Oliver.
I like [name_u]Elliott[/name_u] because I haven’t been seeing many of them around. There’s also a nice visual symmetry with [name_m]Matthew[/name_m] and the double t. [name_u]Elliott[/name_u] [name_m]Matthew[/name_m] looks nice written out to me, and I’ve always been partial to softer sounds with boy names.
I like the flow of [name_m]Isaac[/name_m] [name_m]Matthew[/name_m] the best. I wanted to vote for [name_u]Elliott[/name_u] but I’m not a fan of [name_u]Elliott[/name_u] [name_m]Matthew[/name_m].
[name_m]Oliver[/name_m] [name_m]Matthew[/name_m] is very handsome and classic!
