Both are gorgeous, but I agree with @pacifica about how [name_f]Eliza[/name_f] and [name_f]Lark[/name_f] sound.
Maybe [name_u]Winter[/name_u] [name_f]Eliza[/name_f] [name_f]Kate[/name_f] could be a compromise there? It would give you a short, one syllable name like [name_f]Lark[/name_f], while you still keep the [name_f]Katherine[/name_f] honor. [name_m]Just[/name_m] an idea.

[name_u]Winter[/name_u] [name_f]Eliza[/name_f] [name_f]Lark[/name_f] got my vote, quite simply because I greatly prefer [name_f]Lark[/name_f] to [name_f]Katherine[/name_f], the latter of which I find a little too commonplace for my liking.
I like both, but I voted for [name_u]Winter[/name_u] [name_f]Eliza[/name_f] [name_f]Lark[/name_f]. It sounds more spunky, and I like the fact that the second middle name is something unexpected.
[name_u]Winter[/name_u] [name_f]Eliza[/name_f] [name_f]Lark[/name_f] is stunning.
Late to the party but another vote here for [name_u]Winter[/name_u] [name_f]Eliza[/name_f] [name_f]Lark[/name_f]! It’s such a sweet, fun, lively combo. So much personality
