Cece or Ceci are both nice…CC I would only use if its her actual initials, not for [name]Cecily[/name], and I agree with you, Cici is the pizza buffet, dont go there.
I have a cousin with the nickname CeCe, and it still works well even though she’s in her teens!
I like the spelling Cici best. Its the most intuitive.
