You have lovely options on your list but the first name I would try to choose is the first name based on how it flows with Cantu as that is how she will be known and those two names are frequently used together, whereas all three are not. My favourites with your last name are [name_f]Gia[/name_f] and [name_f]Olivia[/name_f]. [name_f]Gianna[/name_f] is lovely too but does share sounds with the last name as in gi[name_f]ANna[/name_f] cANtu although it does work. I love [name_f]Gia[/name_f] [name_f]Francesca[/name_f] Cantu!
I honestly think go with what you like most- how often is the full name with middle name used? At least for me its only been a handful of times- Graduations, weddings/baptisms/religious celebrations. But day to day life not so much.
I think any of the three first names you suggested would be great. [name_m]Just[/name_m] avoid anything that might lead to Cici as a nick name as she’d be Cici C. (we were very close to doing this exact thing to our daughter!)

[name_f]Olivia[/name_f] Cantu sounds lovely! I can see why you’re having trouble with combinations though- names with a “k”, “ahn”, “oo” and possibly “ah” sound in it wouldn’t flow well with your last name, and they’re all pretty common sounds in names!
What about [name_f]Giada[/name_f] instead of [name_f]Gianna[/name_f]? The stress isn’t on the “ah” as much and it doesn’t have the “ahn” so I think it flows better.
