I would use [name_u]Beau[/name_u], without a doubt. “Bou” is a fairly ambiguous spelling and would give you a lot of trouble. I instinctively pronounced it boo like in bouffant, bouquet, boutique, boulevard (and like the name [name_u]Beau[/name_u], those are all of [name_m]French[/name_m] origin). And then there’s boundary and bout and bounce and a lot of other complications.
[name_u]Bo[/name_u] seems short, but the biggest reason I’d rule it out is that, judging from your post, it seems like neither of you are particularly keen on that spelling to begin with.

Definitely not Bou. The pronunciation would be “boo”. I recommend [name_u]Beau[/name_u], and if not that, [name_u]Bo[/name_u].

I would pronounce Bou like “[name_u]Boo[/name_u]” (B-u sound, not B-o). I like [name_u]Beau[/name_u] best, but [name_u]Bo[/name_u] is really cool as well!

I would also avoid using another one syllable name for the middle just to avoid sounding match-y, so my pick is [name_u]Beau[/name_u] [name_m]Henry[/name_m] 
I prefer spelling [name_u]Beau[/name_u] for sure.
I like [name_u]Beau[/name_u] [name_u]Hudson[/name_u] the best for the combos.

I like [name_u]Bo[/name_u] best, it’s the only one that I view as a name and it’s the easiest to explain spelling. To me, being familiar with [name_m]French[/name_m], [name_u]Beau[/name_u] is a word and Bou, I’d pronounce [name_u]Boo[/name_u] (as in [name_u]Lou[/name_u]).
I think [name_u]Bo[/name_u] would sound awesome with a longer middle name but from the ones you listed, I like [name_u]Bo[/name_u] [name_m]Henry[/name_m] and [name_u]Bo[/name_u] [name_u]Jameson[/name_u].

[name_u]Bo[/name_u], I see it more for a girl, as a nickname of [name_f]Boheme[/name_f] for example. It’s not ae classy as [name_u]Beau[/name_u].
